Garlic Butter Salmon & Broccoli  ingredients: You will need: 2 boneless, skinless, salmon filets 1 small head of broccoli, washed, trimmed and broken into florets (about 2 cups) For the garlic butter: 2 cloves of garlic, peeled and minced 3 TBS butter, melted 1/2 TBS soft light brown sugar, packed 1/4 tsp dried oregano 1/4 tsp dried thyme 1/4 tsp dried rosemary salt and black pepper to taste 1/2 lemon, divided in half instructions: Preheat the oven to 200*C/400*F/gas mark 6. LIne a baking tray with aluminium foil and spray lightly with some non-stick cooking spray. Pat the salmon dry and then arrange on the baking sheet. Scatter the broccoli florets around the salmon on the sheet. Whisk together the melted butter, brown sugar, oregano, thyme, and rose mary. Drizzle this mixture over the salmon and the vegetables. Guacamole

Guacamole ingredients: 1 large ripe tomato 2 ripe avocados the juice of one lime a good handful of fresh coriander leaf (cilantro) half a small red onion, finely chopped 1 mild green chilli, deseeded and finely chopped salt and black pepper instructions: Cut the tomato in half. Scoop out the seeds with a teaspoon and discard.  Chop the flesh well and add to a bowl. (You can peel the tomato if you want to, but I didn't bother. The extra fibre doesn't bother me.) Halve and stone the avocado.  Scoop out the flesh with a tablespoon.  Roughly chop it and add it to the bowl along with the lime juice and most of the coriander leaf, the onion, chilli and some seasoning to taste. Combine everything well with a spoon and then mash a tiny bit, but do leave a few chunks.  Sprinkle with the remaining coriander leaf to serve.
