Baked Tomatoes and Mushrooms
Baked Tomatoes and Mushrooms (2-4 servings)
Recipe:
· 25g butter, melted
· 1/4 teaspoon thyme
· 1/4 teaspoon oregano
· 1 teaspoon flat leaf parsley, finely chopped
· 4 large field mushrooms
· 4 ripe tomatoes, halved
· Drizzle of extra virgin olive oil
· Salt and pepper to season (to taste)
Method:
1. Preheat the oven to 220 degrees C (425 degrees F / Gas Mark 7).
2. On a well greased baking tray, place the tomatoes, cut side up and the mushrooms, cap side down.
3. Combine the melted butter and herbs in a small bowl, and brush/drizzle onto the tomatoes and mushrooms. Drizzle with the olive oil, season with salt and pepper, and bake for about 20-25 minutes until the tomatoes have softened.
